It was a perfect start to the holiday season this week at Cantina Rooftop. The popular restaurant hosted a private holiday celebration with renowned Chef Rick Bayless on Wednesday, December 5th in collaboration with Modelo Negra. Chef Bayless recently released his book More Mexican Every Day and discussed the beauty of the recipes with guests as he demonstrated three different selections featuring Modelo Negra.
Guests enjoyed Grilled Duck Breasts with Mole Colorado, Tacos of Garlicky Mexican Greens and the Modelo Negra Chocolate Float. They also enjoyed drinks crafted by Cantina Rooftop’s in-house mixologist, Nelson Lemus, while Executive Chef Gonzalo Colin and his team were on hand to help Chef Bayless with the preparation of the meal. Dishes were delicious, and all guests were gratefully gifted signed copies of Bayless’ new cookbook.
Cantina Rooftop offers a modern Mexican menu from Executive Chef Gonzalo Colin. The rooftop restaurant and lounge serves up a selection of ceviches, guacamoles and tacos, in addition to their signature house specials including Barbacoa de Cordero, a Maguey braised lamb shank, consommé with Guajillo sauce and comal corn tortillas, Pollo Campestre served with Grandma’s mole negro, epazote rice and grilled cornlettes.
In-house Mixologist Nelson Lemus, curates a unique menu with one-of-a-kind cocktails. Cantina Rooftop’s Latin inspired cocktail menu incorporates the freshest herbs, spices and tropical fruits. Signature libations include Oaxaca Smash (Mezcal, Chai Sweet Vermouth, Spicy Agave, Citrus, Angostura Bitters) and Cometa (Tequila Reposado, Crème de Cassis, Citrus, Spicy Agave, Ghost Peppers.)
