Make Chef Guo Your Dragon Year Resolution

Stepping into Chef Guo’s cloistered realm at The Randolph House is a decidedly theatrical experience in the best possible way. From the moment we rang the doorbell to the private entrance, we were enveloped in a world where every detail has been carefully curated for imaginative transportation to the heart of China’s imperial courts. My dining companion, photographer Helen Ho, immediately felt a misty transfiguration to her mother’s homeland and exclaimed delightedly upon the details and artifacts that steadfastly surrounded us.

Indeed, one of the most striking aspects of Chef Guo’s restaurant is the symbolic nature of his processes that threaded itself throughout the fascinating evening. In the center of the dim golden light of the room stands a huge sacred ginkgo tree that he built himself, positioning by hand every autumn colored leaf that encircles the ceiling to symbolize good luck and health. The surrounding walls and shelves hold art from his personal collection. Every element has been chosen with care to create an ambiance that is both opulent and meaningful.

This is all in atmospheric preparation for the menu which is itself a masterpiece, with each dish meticulously crafted to reflect Chef Guo’s innovative nutritional approach to traditional Chinese cuisine. Highlights include the Roasted Peking Duck with Foie Gras Cherry, a delightful combination of crispy duck topped with Siberian caviar and savory foie gras rolled in beets to cleverly resemble a cherry.

Another standout is the Eternal Bliss of Qian Kun Pot, a dish that takes 10 days to create and features a rich broth filled with soft, yonic abalone, feathery sea bass, tender quail eggs, and more. This dish is served in a custom created, dragon-festooned Cloissone pot that our attentive server kindly explained hearkens to Emperor Cheng zu Zhu Di who moved the Capital to Beijing during the Ming dynasty. He regarded Beijing as the Land of Dragon Rising and the “center of the world” and had this wonderful dish created in celebration. It’s a holiday dish in China, and more than one homesick national has been moved to happy tears upon tasting it.

Chef Guo’s journey to becoming the only chef to have his cuisine officially recognized by the Chinese government is as remarkable as his food and creativity. He began his culinary training at the age of 14 under the mentorship of Chinese Master Chef Ding Guangzhou, a seventh-generation disciple in the line of royal chefs. In his forty-year career, Chef Guo has held prestigious positions such as Executive Chef at the Platinum Seven-Star Beijing Palace International Hotel and has been recognized as an Elite Master of the Chinese Culinary Arts by China.
